Our Warming Winter Box contains a selection of the so-called ‘less favoured’ cuts which, because they come from parts of the animal with plenty of muscle and fat, can be even more delicious. We notice that the top chefs order a lot of these cuts because they know that, with careful preparation and long, slow cooking, they are even more flavoursome than the easier-to-prepare cuts.
