Chuck Steak Chilli

Serves 4-6

  • 1kg chuck steak - diced
  • 1tsp ghee
  • 2 onions
  • 4 garlic cloves
  • 1 tomato
  • 1 heaped tbsp tomato purée
  • 1 bay leaf
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 tin chopped tomatoes
  • 2 stock cubes
  • 1 tin water
  • Coriander
  • 240g tin of kidney beans

To serve:
  • Rice
  • Cream fraiche
  • Grated cheddar
  • Coriander
  • Fresh or dried red chilli
  • Lime wedges

1.preheat oven to 150c
2. Finely chop the onion and garlic, rough chop the tomato.
3. Brown the beef in a casserole in the ghee so it takes on some colour. Then add the onion and garlic and soften followed by the spices, tomato purée and fresh tomato.
4. Add the chopped tomatoes, crumbled stock cubes and water. Stir, cover and place in the oven for 2.5-3 hours or until the meat is falling apart, add the kidney beans for the last hour. Season to taste.
5. Check every hour and add splashes of water if it’s drying out. If after cooking it’s too runny, pop on the hob and bubble without the lid to reduce.
7. Serve with rice, cream fraiche, grated cheddar, corriander, chilli and lime.
